Chef Germán Huerta brings over ten years of international culinary expertise and a distinctive creative vision to his new role. His most recent triumph was at Finz, Beach Rotana’s acclaimed seafood restaurant, where his leadership helped secure its place in the Michelin Guide Abu Dhabi for three consecutive years.
Originally from Querétaro City, Mexico, Chef Germán’s culinary journey has taken him through kitchens in Mexico, the United States, and Canada. This global experience has shaped his unique cooking style, defined by bold Mexican flavours and masterfully layered spices.

At Trader Vic’s, Chef Germán is eager to reinterpret the beloved French-Polynesian concept while honouring its rich legacy.
Guests can expect a refreshed menu, featuring bold new dishes inspired by his extensive travels and signature style.
Highlights of the new menu include Beef Cho Cho, flavour-rich beef skewers expertly prepared and finished tableside over a flaming hibachi, and Peking-style Duck, a luxurious dish served with wild rice, shiitake mushrooms, toasted pine nuts, and a sweet plum sauce, offering a delightful twist on a classic. For a sweet ending, look forward to the delectable Chocolate Mandarin Pavlova, designed to perfectly complement Trader Vic’s renowned tropical cocktails.
