To celebrate this exclusive import, Chef Moon has crafted an immersive and exquisite tasting experience: the Hanwoo Beef Omakase, affectionately dubbed the “Hanwookase.”
Available starting October 8, the culinary journey begins with Juansang, an elegant introduction featuring small bites that deepen the palate and showcase the versatility of Hanwoo:
Yuksu: A warm Hanwoo beef broth.
Yukhoe: Classic beef tartare, highlighting the beef’s purity.
Crispy Cow (a reimagined Hanwoo dish) and Mushroom Bugogi (Charcoal grill beef), embodying the essence of fire and smoke.
The centrepiece is Meat Me at the Grill, presenting the highest quality Hoengseong Hanwoo 1++ cuts, including striploin, tenderloin, and ribeye. This is complemented by Yangyeom Galbi, tender short ribs marinated in a savoury soy-based sauce, offering a rich, flavorful contrast.
The meal is completed with seasonal Ban Chan, a Scallion salad with gochujang vinaigrette, and a savory Egg Soufflé. Diners can choose from delicious stews with rice, featuring spicy kimchi or Japanese A5 brisket soybean.
