Dubai, UAE: Orilla officially introduces a fresh MeditterAsian spirit to the Emirates located in the vibrant JVT community. A Harmony of Two Worlds

For Chef Saradhi, Orilla—meaning “shore” in Spanish—is a deeply personal project. After nearly two decades shaping Dubai’s dining scene and traveling across Mediterranean coastal towns, he has distilled his life’s journey into one location.

At the heart of the experience is the MeditterAsian menu, where Mediterranean simplicity is elevated by Asian precision. The dishes are an intimate reflection of Saradhi’s lived experience, offering a gastronomic journey that feels both familiar and distinctly new. Signature culinary highlights include: Homemade Focaccia enriched with Gruyère, smoky olives, and silky tarama; Charred Octopus served over sourdough spuma with caper dust and salsa verde; Fennel and Artichoke Salad with a truffle vinaigrette for a touch of coastal freshness; Mascarpone Ice Cream topped with Beluga caviar and fine olive oil, showcasing the restaurant’s modern, playful edge.

Sustainability as a Foundation

Sustainability is woven into Orilla’s DNA with the same intentionality as its flavour profile. In a unique partnership with local artisans, the team has integrated recycled oyster shells into a custom mosaic counter, turning organic waste into an enduring design feature. The space honours the natural world through the use of reclaimed materials and thoughtful sourcing, ensuring the build is as responsible as it is beautiful.

“Orilla is the point where my memories meet my craft,” says Chef Saradhi Dakara, co-founder of Stellar Society Group alongside Utkarsh Patel. “I wanted it to feel like standing on a shoreline—that quiet intersection between worlds.”

As the first brand under the Stellar Society Group, it marks the beginning of a new chapter in Dubai’s luxury hospitality landscape.
