
Dubai’s dining landscape now features Revolver, a restaurant founded by the Culinary Arts Group of Singapore, located within The Opus by Dame Zaha Hadid in Business Bay. This venue, which opened on March 3rd, 2025, offers a dining experience, blending South Asian flavors with culinary techniques.

Revolver holds a Michelin Select accolade from its Singapore location. At the helm is Chef Jitin Joshi, whose career includes time as Executive Chef at the two-Michelin-starred Gymkhana in London. Chef Jitin’s mastery of techniques and understanding of flavors earned him the privilege of cooking for royalty and icons, including David Beckham, Ed Sheeran, and King Charles.

A Feast for the Senses
Revolver delivers a dining spectacle. The open wood-fired grill and tandoor, positioned at the heart of the restaurant, provide guests with a seat to kitchen action. An outdoor terrace offers an al fresco dining option.
Flavors, Techniques
The spice and fire menu celebrates the culinary heritage of South Asia, showcasing ingredients elevated through techniques. Signature dishes include:
- Signature Smoked Chutoro Tartare: Inspired by Northern India, featuring mustard leaves, bamboo shoot, and anchovies.
- Burrata Street Style: A fusion of Italian and Asian flavors, reminiscent of Chinese Dan Dan noodles, with sesame peanut sauce and Youtiao.
- Lobster Manchurian: A Revolver classic, with umami and spice, with a sauce from Tangra, Kolkata.
A Beverage Program
Revolver’s beverage program, designed to complement the menu’s flavors, is a journey. Cocktails like “Unlighted” and “Drift” showcase ingredients. Martini aficionados will delight in the selection of martini styles, presented with ice and garnishes.
