Team trained in Italy

In the lead-up to the grand opening, Roberto’s culinary team undertook a focused training period in Italy. This experience was conducted under the tutelage of Chef Enrico Bartolini, the country’s most Michelin-starred chef where this experience served to strengthen their ingredient-led approach and reconnect them with the deeply rooted traditions that guide true Italian cooking.

Their time spent with regional producers and artisans provided deeper context to the premium ingredients at the heart of the menu, bringing authenticity and a sense of community into the preparation.
