Açaí: From the Amazon rainforest to your breakfast bowl

The global process of Açaí involves harvesting ripe berries from palm trees in the Amazon rainforest, often by local communities climbing the tall trees.

Due to the fruit’s perishability, it’s rapidly processed near the source, typically pulped and often pasteurised or freeze-dried to preserve nutrients and extend shelf life for global shipping. Packaging ranges from frozen pulp packs and smoothie pouches to ready-to-eat bowls.

While traditionally a sustainable non-timber forest product, the boom has led to intensified cultivation, sometimes resulting in deforestation and biodiversity loss through monoculture plantations replacing diverse native forests.

Ethical Açaí: Sambazon’s Journey

To understand the journey of this powerful berry and the crucial role of responsible practices, we interviewed Ryan Black, CEO & Co-founder of Sambazon.

As pioneers in the Açaí market, the brand has been committed to a “Palm of the tree to the Palm of your Hand” ethos since 2000.

Question: As a pioneer in bringing certified Açaí to the world. What was the initial vision behind ensuring we were getting authentic and sustainably sourced berries back in 2000? What made that certification so crucial from the start?
Answer: “When we founded Sambazon in 2000, our mission was to share the powerful benefits of açaí with the world — without compromising the environment or the people who grow it. From day one, we knew that authenticity and sustainability had to go hand in hand. That’s why we committed to organic and Fair Trade certifications early on. These certifications weren’t just labels — they were our way of building a model that supports the Amazon and empowers its communities. 
“It was crucial to set a new standard for what responsible sourcing could look like. By doing this, we made sure that when people enjoy Sambazon, they’re not only getting pure, high-quality açaí—they’re also supporting a more ethical and sustainable food system.”

Question: Can you share a moment or story that truly illustrates the ‘Palm (tree) to palm (of your hand)’ transparency initiative? How does this transparent supply chain directly benefit the flavour and quality of the Açai?
Answer: One of the clearest examples of our ‘Palm to Palm’ transparency came from a visit to our production facility in the Amazon. We were speaking with a family of harvesters who’ve worked with us for over a decade. They explained how our training and investment in quality harvesting techniques allowed them to pick only the ripest berries at the exact right moment. That precision directly impacts the taste and nutritional value you get in every Sambazon pack.
Our traceability doesn’t just ensure ethical practices—it results in better-tasting, more nutrient-rich açaí. That’s what ‘Palm to Palm’ is all about: quality and accountability from the forest to your freezer.”

Question: Sambazon’s Fair Trade certification positively impacts the Amazonian communities. Can you share a specific story that shows how it has directly contributed to improving the lives of the growers?
Answer: A standout example is the school we helped fund in the community of Ilha das Cinzas. Many of the children there previously had to travel long distances to attend class—if they went at all. Through our Fair Trade fund, which gives a percentage of every sale back to the community, we supported the building of a new school right in their village. Today, those kids have access to consistent education, and the community has become even more engaged in our sustainability mission. It’s a powerful reminder that every bowl or smoothie made with Sambazon açaí has a ripple effect.

Question: For those of us who are mindful about what we eat, can you highlight a key nutritional benefit of açaí that you think really resonates with health-conscious individuals?
Answer: Definitely. One of the biggest draws of açaí is its incredible antioxidant content, especially anthocyanins—those are the same powerful compounds found in dark berries like blueberries. But unlike other fruits, açaí also contains healthy omega fats, fiber, and very little naturally occurring sugar. It’s a rare combination that supports energy, heart health, and recovery. For health-conscious consumers, it’s the perfect whole-food ingredient that fuels your body while tasting amazing.

Question: The F&B scene is always introducing new “superfoods.” What is Açaí’s staying power?
Answer: Açaí has staying power because it’s more than a trend—it’s a truly functional, whole food.
What sets Sambazon apart, is our direct relationship with the source and our integrity in how we process and preserve the berry. We don’t cut corners, add fillers, or use artificial sugars. People trust us because we’ve consistently delivered on quality for over two decades. Question: For the home açaí enthusiast or someone looking to explore beyond the basic bowl, could you share some of your favourite creative ways to use Sambazon products in recipes or quick snacks?
Answer: Absolutely. One of my favourites is açaí chia pudding—mixing our açaí smoothie pack with plant-based milk and chia seeds for a nutrient-dense breakfast or snack. It’s also great in energy bites blended with oats, dates, and nut butter. For a twist, try using açaí as a base for a salad dressing—mix it with olive oil, lime, and a little agave. The flavour profile is incredibly adaptable, so it’s fun to experiment with both sweet and savoury combinations.

Question: Beyond the taste and health benefits, what is it about the overall Sambazon brand ethos – its commitment to sustainability and ethical practices – that you believe resonates most strongly with your loyal açaí consumers?
Answer: I believe our customers genuinely care about the story behind their food. They want to know that what they’re consuming is doing good in the world. Question: Looking ahead, what exciting new Açaí products or initiatives do you look forward to introducing, and what’s your prediction for açaí in the years to come?
Answer: We’re incredibly excited about innovations that make açaí more accessible and convenient—like our Ready-to-Eat Bowls and new packaging that reduces environmental impact. We’re also expanding into more global markets, and investing in regenerative agriculture practices in the Amazon. Looking forward, I believe açaí will continue to be at the forefront of functional food because it delivers on taste, nutrition, and ethics. As consumers demand more transparency and responsibility from brands, we are ready to lead that next wave.
