Abu Dhabi, UAE: 99 Sushi Bar & Restaurant has introduced a 12-course Chef’s Table at its locations in Downtown Dubai and The Galleria Al Maryah Island, Abu Dhabi. The experience is staged within the venue’s private dining rooms.

The 12-course progression focuses on premium Japanese ingredients and specific technical preparations. The menu includes Kobe Edamame prepared with Wagyu fat and truffle, a Toro pizza Okonomiyaki with jalapeño and tare sauce, and the 99 Katsusando featuring Wagyu with a marbling score of 9. Other dishes featured in the sequence include the 99 Jewel Maki, composed of Toro, akami, black truffle, and Kaluga caviar, and Atlantic Blue Shichimi Lobster. The meal concludes with a Chocolate Fondant served with sesame brittle and matcha sponge.

Priced at AED 1,500 per person, the fixed menu is paired with a selection of wine and sake, and includes a personalised gift for each attendee.

The beverage programme differs between the two locations. In Dubai, the pairings are focused on sake and are managed by Venkadesh Thanga Mariappan, who held the title of World’s Best Sake Sommelier in 2016. 

\In Abu Dhabi, the pairings include both wine and sake, led by Head Sommelier Bhesh Khatri and WSET-certified sommelier Felipe de la Torre.

Booking the VIP Experience

The private dining room at 99 Sushi Abu Dhabi comfortably accommodates 10 to 12 guests, while the Dubai location accommodates between 12 and 14 guests. 

Due to the high level of personalization and the rare ingredients involved, a minimum of six guests is required to book the experience.

An advanced payment of AED 1,500 per person is mandatory, and bookings are non-refundable, ensuring the exclusivity and preparation required for each session.

The brand continues to build on its global reputation, with the Abu Dhabi flagship having earned a Michelin star for three consecutive years and maintaining its position in the 2026 Michelin Guide as a Selected restaurant.

The restaurant group, which originated in Spain in 2005, continues to operate under the culinary direction of Thinus van der Westhuizen, who oversees the gastronomic development for the brand’s UAE and international outlets.
