Dubai, UAE: Chef Vikas Khanna is returning to his restaurant, Kinara, at JA Lake View Hotel on 28 February 2026 for the second instalment of the Forgotten Flavours series. This quarterly programme explores specific themes of Indian culinary history through curated menus and collaborative pairings.

The Royal Kitchens of India

The theme for this session focuses on the historic palace kitchens of India, where traditional recipes are adapted for a contemporary setting. The experience is presented as a 6-course tasting menu that features dishes such as Rathore’s 100 layer potatoes with ker sangri pickle, Kashmiri nadroo tikki with apricot and Awadhi galouti kebab decorated with gold leaf. Main courses include royal Bengal rizala murgh and chennar kalia, followed by a dessert of Odia royal chenna poda.

Collaboration with Sula Wines

The 6-course menu includes a grape pairing from Sula Wines, selected to complement the specific spice profiles of the royal recipes. For example, the Awadhi galouti kebab is served alongside a Sula Shiraz. The event takes place from 7pm to 11pm and is priced at 850 AED per person. Due to the limited nature of the one-night engagement, the venue requires advance reservations.
