The is restaurant, housed in Ritz-Carlton Al Wadi Desert, is led by Dutch-Indonesian chef Syrco Bakker, who earned two Michelin stars for his work as the head chef at Pure C in the Netherlands.
Awarded one toque by Gault&Millau 2025, Farmhouse by Syrco offers a conscious dining experience, highlighting local flavours and responsibly sourced ingredients.

Chef Syrco Bakker’s approach is guided by three core pillars: Traceability, Nature, and Transparency. Therefore, the team crafts every dish from ethically sourced, sustainable ingredients.
Chef Syrco’s philosophy is clear: every dish must honour its origin. The new menu reflects a deep commitment to sustainabilty and respect for the land. This includes thoughtfully sourced seafood, ethically raised meats, and vibrant, farm-fresh vegetables.
A Curated Journey of Arabic and Global Flavours
The new set menu highlights the best of the season. Specifically, it offers a curated journey priced at AED 390 per person. Dishes include Mahi Mahi with cured belly, tender local lamb, and a variety of fruit and vegetable creations. In addition, guests can savour indulgent desserts inspired by Arabic flavours. These include Alf Laylah wa-Laylah, Kunafa with mint, and Atayef bil Ashta. Significantly, each course tells a story.
For those preferring a more personalised dining experience, the à la carte menu features signature dishes. These include Steak Tartare infused with local flavours, Market Fish Salona, Heirloom Tomato Salad, and Lobster with Stracciatella. Crucially, every dish is designed to celebrate bold flavours while strictly upholding principles of conscious and sustainable dining.
