Dubai, UAE: KEN by Kamatsuda is serving Nagasaki’s premium Koi-Minori strawberries at The Dubai EDITION from 6 February until 28 February 2026. This specific variety, harvested from Japan’s Nagasaki Prefecture, is known for its low acidity and firm texture.

KEN by Kamatsuda at The Dubai EDITION hosts a limited-time Nagasaki strawberry showcase from 6 to 28 February 2026, featuring omakase and à la carte dishes.

Chef Ken Kamatsuda has integrated the Nagasaki strawberries into both savoury and sweet formats. A featured addition to the menu is a carpaccio of Matsusaka beef paired with Koi-Minori strawberries, designed to balance savoury depth with the fruit’s sweetness. The pastry team has also developed three specific desserts for the occasion: a strawberry parfait, a strawberry tart and a strawberry daifuku. These dishes are intended to highlight the natural characteristics of the fruit without the use of heavy sweeteners.

Nagasaki Prefecture Collaboration

KEN by Kamatsuda at The Dubai EDITION hosts a limited-time Nagasaki strawberry showcase from 6 to 28 February 2026, featuring omakase and à la carte dishes.

The initiative is a collaboration with Nagasaki Prefecture to introduce regional Japanese ingredients to the Dubai market. Chef Kamatsuda, who maintains connections with producers in the region, stated that the feature aims to present an authentic expression of Japanese seasonality. According to representatives from Nagasaki Prefecture, the Koi-Minori variety was selected for its balance of sweetness and aroma.
